Default 2010 rear brakes - question, and an "oops"

Did the front brakes last weekend. Doing the rears this weekend.

Took off the wheel and caliper, and went to remove the caliper bracket. Loosened top and bottom bracket bolts with a 14mm socket... or so I thought.

It turns out the bottom one is hidden behind a sway bar or track bar or something, and I mistakenly loosened a bolt that looks like it goes thru the hub assembly? I tightened it back up as best I could, but I wasn't sure if this was one of those setups where you're supposed to tighten them in a pattern? I believe there are 3 total -- do I need to loosen all of them and then incrementally tighten them all back up, or am I OK just cranking this one back in on its own?

Lastly... now that I have the brakes off... any tips on getting this rotor off? I've sprayed into the lug mating surfaces with PB blaster... banged with a hammer between the lugs and tried banging it off from the back... and yes the parking brake is off and the rotor screws are out. Any suggestions? This job is taking me 3x as long as it should because of these @#@%# rotors.
