Your Sonata is designed to run on a minumum of 87 octane based on the (RON+MON)/2 method of rating octane. In Europe, that is 92 RON octane.
US - Europe
87 - 92 (regular)
89 - 95 (mid grade)
91 - 98 (premium)
So you can use 92 RON octane fuel. Anything more than that is a waste of money.

Okay, I'm not sure about using 98% Ethanol in the Sonata. I'd stick with E95. You'll get better fuel economy with the lower ethanol percentage.
18" wheels won't upset the chassis. I installed 18" wheels on my Tucson that originally came with 16" wheels. Just be sure the overall tire height is the same. For example, I went from 235/60-16 tires to 235/50-18 tires when I swapped the 16" wheels for 18" wheels. That kept the overall tire height the same.
